I'm going to have surgery in a month & won't have much energy for several weeks so I'd like to make a lot of meals ahead to freeze then reheat on the stove or oven. One thing I'd like to make is miso soup (to help my digestive tract get back to work quickly). I usually make it with red cabbage, broccoli, brussel sprouts, carrots, & whatever other vegetables I fancy at the time! I quickly stir fry them, add a lot of water to cook along with raw sunflower seeds, turn it off & add the miso. I know boiling will kill the microbiotic benefits, but will freezing it after it's been made up?
I'm also planning on making bean soup, vegetable chili (very mild due to migraines), a dish with fake sausage, macaroni & tomatoes, healthy "shepherd's pie" with brown rice, vegetables & tomatoes, maybe some stuffed shells or vegetable lasagna, though I'm not sure if I'll be able to handle much cheese. Any other ideas for dishes that will freeze well & are relatively high in fiber and relatively low in fat? Any recipes or links to recipes would be greatly appreciated, too.
