I work at a chinese restaurant and when people pick up there take out, some ask for extra plum sauce or sweet and sour sauce. We fill up small plastic containers full of the sauces to easily had them to customers. The plastic containers are kept in a small bin near the cash register, and not refrigerated.
I brought some sweet and sour sauce home from take out I got after work. The next day as I go to eat left overs, the extra sweet and sour was gone. My step mom then tells me she threw them all away because they are supposed to be refrigerated. I told her we don't refrigerate them at work and she scoffed at me.
I am confused. Is my blonde, Orange County step mom correct on this (hope not) or do my very authentic, traditional Chinese bosses know what they're doing?
