How long is miso soup good to eat?
I just made some miso soup for the first time, and I'm wondering how long I can keep it in the refrigerator before it goes bad?
I always keep the stock and miso separate until serving time. The stock should keep like any other soup, mine can contain tofu (not if it's fried) or wakame, but miso paste, fried tofu and green onions go in just before serving when I make it.
This is good advice. If you chill it properly it will last 2-3 days before going bad, but reheating miso soup brings out a sour flavor, ruining the balance of flavors. I would also leave out wakame until just before serving, because its color and texture will change if kept in the soup too long.
This is how we do it in the restaurant I work in.
1-2 days max. I eat reheated miso soup almost every day for lunch.
